Pax Wine Drinkability Chart

Winemaking Notes:
Cuvee Keltie is created with a focus on savory elements of Syrah and the varietal’s potential for austere and rustic structure. Exceptional barrels are selected from several vineyards throughout Sonoma county, fermented with 100% of their stems, and aged for 24-26 months in no new oak. The defining elements of Keltie arise from sites heavily influenced by cool breezes in western Sonoma county, providing herb and spice flavors in addition to acidity, or from very low vigor hillside sites that provide concentration, depth, and structure.

Tasting Note:
The wine is often characterized by a blissful mix of cardamom, roasted rosemary, and smoked cherries. While not as rich in the middle as the Cuvee Christine, this wine lacks nothing in way of structure, built around firm acidity and tannins the finish is clean, crisp, and very long. Plan on enjoying the development of this wine over the course of many years, if you can resist its youthful deliciousness
