Harvest Method: 75% machine picked, 25% hand picked
Processing: 100% destem, no crush direct to tank. Cold soak for 3 days at 50 F before inoculation with various yeast strains
Maturation: Aged 9 months in a combination of French and American oak
pH: 3.6
Total Acidity: 6.1 g/l
Alcohol: 13.50%
Residual Sugar: 2.3 g/L
