Appellation: Napa Valley
Varietal Blend: Cabernet Sauvignon & Merlot
Soil: Alluvial, well-drained, gravelly loam
Harvest: Manually harvested at optimum ripeness and hand sorted in the vineyard. These vineyards were harvested on September 25th and October 12, 2006.
Technique: Destemmed and crushed into stainless steel fermentation tanks. Inoculated with Pasteur Red yeast, fermentation completed in 12 days. Pumped over twice daily. Held on the skins for an additional 10 days to complete malolactic fermentation and soften tannins. Gently pressed in a bladder press, racked off the gross lees and moved to barrels where the wine was racked quarterly to allow for natural clarification. The final blend was assembled from hand selected individual barrels and bottled in June 2008.
Aging: Aged 100% new French oak barrels for 22 months. (50% Hungarian and 50% French)
Tasting Notes: Rich aromas of cranberry, black cherry and vanilla precede the complex flavors of black cherry, cedar, bittersweet chocolate and black currant. Together the French oak and black fruit combine in the lengthy finish.
Production: 495 Cases
Wine Maker: Bill Parker
Alcohol: 14.3%
