Domaine Bernard Defaix Chablis 1er Cru Côte de Léchet

The 1er Cru Cote de Lechet is home turf for Domaine Bernard Defaix - their winery and cellar is just at the base of vineyard hill in the village of Milly, they are the largest landowners in the cru, and the only certified organic grower there.

The wine itself is racy, yet layered ,with yellow stonefruit flavours bouncing around with crunching citrus and pebbly minerality. There is a small percentage of old oak used but this is a linear, pure style, not a Cote de Beaune wannabe.
Defaix is based in the small village of Milly, on the left bank of the Serein river that divides the Chablis. The Domaine is now run by Didier, son of Bernard, and his wife Helene, and comprises approx 25 hectares across Petit Chablis, Chablis, 1er and Grand Cru sites.

An early convert to organics, the wines are pure, clean but also have weight and texture that is oft lacking in basic Chablis.
We cultivate 8 hectares of this Premier Cru located on the slopes of the village Milly and on the right backs of the river Serein. We are the biggest owners of this cru.

When some of the plots were planted, we found impressive fossils of exogyra virgula that had been perfectly preserved. The remarkable stony and sunny soil is captured in this powerful and complex wine. It flourishes with age and expresses mineral aromas reminiscent of gunflint. The Côte de Lechet is indeed one of the Premiers Crus of the Chablisian vineyard with the most exceptional ageing potential.
