Wild Thing

The Wild thing derives ite use of a "wild yeast" fermentation, using only the native yeasts form the grapes themselves. This gives the wine a more fully integrated mouthfeel and more complexity in aroma in wines made by selected yeast culture additions. The vines in the Cox vineyard, north of Ukiah in Mendocino County, were grown on gentle hills of rocky soils, which yielded a wine of deep raspberry fruit and vibrant black pepper spice.
