Vieilles vignes – Old Vines of Chardonnay

"To make something out of beautiful origins, it is natural, but to do this and more, it is always harder to attain ". It demands an almost fussy intransigence of all the elaboration levels. Nevertheless, the philosophy of this great cuvée is that it must express the quintessence Pierre Gimonnet & Fils style, and it does exactly that.

vinification

- Grapes harvested manually and split pressing

- Light chaptalisation of the base of this wine of its Cuvée (superior natural degree to 10°5)

- Temperature controlled alcoholic fermentation (18 - 21° C) - Malolactic Fermentation carried out - Elevated 6 to 8 months (3 soutirages) - Cold stabilization (-4°) - Light filtration on clay before assembly

- bottled at the domain in April 2003 - Ageing in bottle, 60 months minimum. - Light dosage (sugar 5gr/l; the "average" traditionally for a cuvée is of 10-12gr/l)

Assemblage de la Cuvée « MILLESIME DE COLLECTION 2002 »

100 % Chardonnay unique of the Le Côte des Blancs, vines more than 35 years old of Premiers et Grands Crus.

- 54 % Cramant Grand Cru (unique old vines of more than 40 years old : Buissons, Fond du Bateau, Gros Monts, Briquettes, la Croix...). About 20 % from the best vines planted in 1911 and 1913

- 31 % Chouilly Grand Cru ( 21% Mont Aigu planté en 1951. 9 % Ronds Buissons, 1% Chalet)

- 15 % Cuis Premier Cru (Croix-Blanche...)

This Cuvée is placed very widely in the value of the soil of Cramant Grand Cru and Chouilly Grand Cru, 2002 vintage being an exceptional year for the old vines and the great terroirs..Certainly the best since 1990 ...
