The Clos Cormerais is a wood-aged wine. Grapes are harvested manually then carried to the wine cellar with much care. The pneumatic press is filled by gravity. Grapes are not crushed. The grape juice is pumped straight into barrels without any sugar and yeast addition. The barrel fermentation lasts one to two months. Half of the barrels are made of acacia, the other half of oak.
