Introduction

A superlative and chilled pre-Christmas catch-up with Daniel at the newly-opened Ocean seafood-themed restaurant overlooking Repulse Bay Beach.

Flight 1 - Aperitif & Amuse Bouche (1 Note)

    France, Champagne

    Drank as an aperitif and then with the amuse bouche of a fantastic seafood-themed lunch at Ocean. No detailed notes but this has added some weight since I opened a previous bottle of the case 18 months ago but it still retains a lovely ozone freshness and youth. Behind the bubbles is a very serious wine with increasing notes of lightly roasted almonds and hazelnuts and understated brioche and it can only get better with more age. As Lauren Sorokin noted recently, it is amazing how they can achieve such consistent top-table quality with the volume that they produce.

Flight 2 - Eight Courses of Manu Degustation (1 Note)

We decided to split every course so we were able each to sample every dish on the menu......which is very visual, light and japanese influenced......bravo, chef!

  • 1994 Joseph Drouhin Beaune 1er Cru Clos des Mouches Blanc 93 Points

    France, Burgundy, Côte de Beaune, Beaune 1er Cru

    Decanted for an hour and then drank slowly to accompany a superb 8-course seafood-themed lunch. From the Drouhin Family 2014 cellar release. Deep but bright yellow colour. Nose is very muted, understated new tennis balls. palate is dry as a Beaune, beautifully rounded and resonant with the slightest almond and lemon notes.....you have to chase after it. Palate is very crisp minerality, almost flinty...all elegance, lightness but ephemeral power. Actually, this sneaks up on you at the finale and has a very powerful reverberance. Absolutely gorgeous and perfect with the lightness and finesse of the lunch dishes.

Flight 3 - 1994 Sanch Panza Double Corona on the Rooftop (1 Note)

Mellow was an understatement as the sun went down on a picture-postcard blue sky day overlooking the ocean.

  • 1995 Beringer Vineyards Chardonnay Sbragia Limited Release 90 Points

    USA, California, Napa Valley

    Drank over a similar vintage of Cuban cigars at the end of a languid lunch that finale'd in watching the winter sun go down over Repulse Bay. Deep golden yellow. Nose is mildly oxidative with mild milky coffee and confit peach. Palate is really good acidic fresh clean cut with fresh apricot that originally started out confit. Heady and opulent. A joy.
