Introduction

After the Renaissance Faire, we had this lovely salmon dinner in a soy, ginger and garlic marinade with a bit of apple cider vinegar -- and grilled on a cedar plank. Before I was a little skeptical of the recipe, but it turned out to be quite a good dish, for pairing with pinot noir. (And tasty on its own!) Both the wines paired quite well with the salmon, which brought out secondary flavors in the wines.

Flight 1 (2 Notes)

  • 2014 Davis Family Vineyards Pinot Noir Russian River Valley 92 Points

    USA, California, Sonoma County, Russian River Valley

    Cherry, raspberry, currant, oak, tannins, a little bit of soy (with the food) and some baking spices. This drank great but a little more primary than the last bottle. It was an excellent pairing with the grilled salmon with soy, ginger, garlic and apple cider vinegar on a cedar plank.

    I think it would drink even better with 1-2 years of bottle age.

  • 2007 Bonaccorsi Pinot Noir Nielson Vineyard 90 Points

    This had beautiful, red fruit notes of cherry and currant -- which had deepened since our last tasting - but was still a little tart to me (vs my expectations), and not as oaky or woody as other Bonaccorsi wines I've had.

    It drank much better to me with the grilled salmon, with soy, ginger, garlic and apple cider vinegar, on a cedar plank, which brought out some forest floor, funk and soy flavors in the wine as well.

    It is a good wine -- although better on close-out than at the original $60 retail. (But what isn't?)

    We left the rest of the Coravin bottle at our friend's house.

    Drink now. Best with food.
