This was a dinner of the Albany-Capital Region chapter of La Confrérie des Chevaliers du Tastevin.

Dates stuffed with Rawson Farm Chevre and Pistachios, Smoked Trout Roe, Cucumber and Lemon Cream, Shrimp Tostadas with avocado and Cilantro.
Lobster Pasta: Strozzapreti, Olive Oil Emulsion, Parsley, Parmesan.
Chicken and Hen of The Woods: Roasted Maitake, Mushroom Puree, Herb Pesto.
Prime Beef Carpaccio: Crispy Artichoke, Roasted Tomato, Olives, Whipped Tahini, Shaved Foie Gras.
Roasted Chop and Slow Braised Leg of Lamb: Red Quinoa Salad, Grilled Green Squash, Truffle Jus.
Buttermilk Panna Cotta: Fresh Berries, Graham Cracker Crumble.
Everything went well at this dinner. Kudos to Severn and to the staff at The Old Inn On The Green.
