Introduction

This was a dinner of the Albany-Capital Region chapter of La Confrérie des Chevaliers du Tastevin.

Flight 1 - Reception (1 Note)

Dates stuffed with Rawson Farm Chevre and Pistachios, Smoked Trout Roe, Cucumber and Lemon Cream, Shrimp Tostadas with avocado and Cilantro.

Flight 2 - Première Assiette (1 Note)

Lobster Pasta: Strozzapreti, Olive Oil Emulsion, Parsley, Parmesan.

Flight 3 - Deuxième Assiette (1 Note)

Chicken and Hen of The Woods: Roasted Maitake, Mushroom Puree, Herb Pesto.

    France, Burgundy, Côte de Nuits, Echezeaux Grand Cru

    [Opened at 4pm. Served about 6pm.] Mature garnet color with onion skin edge. From the color, I would think this was much older than 2008. Many thought it was OTH, but I thought it was at its peak. Sweet nose of forest floor with hints of nutmeg and brown sugar. Mature, elegant, complex. Perfect match to the chicken and hen of the woods dish. If these bottles are representative, drink up!

Flight 4 - Troisième Assiette (1 Note)

Prime Beef Carpaccio: Crispy Artichoke, Roasted Tomato, Olives, Whipped Tahini, Shaved Foie Gras.

Flight 5 - Quatrième Assiette (1 Note)

Roasted Chop and Slow Braised Leg of Lamb: Red Quinoa Salad, Grilled Green Squash, Truffle Jus.

Flight 6 - Le Dessert (1 Note)

Buttermilk Panna Cotta: Fresh Berries, Graham Cracker Crumble.

Closing

Everything went well at this dinner. Kudos to Severn and to the staff at The Old Inn On The Green.
