Glass: Zalto Burgundy
Popped and poured, drunk over two days. Clear, medium golden color. Wonderful nose! Deep, smoky, salty, very complex and multil-layered.
On the palate dry with some noticeable sugar tail. Beautiful balance, medium+, ripe acidity, very mineral, some smoky dark notes, lovely stone fruit. Very long and complex. Seems to me at its full peak, but will stay on this level for several years. 95

Perfect bottle, 2021 release from the winery. Popped and poured, drunk over two days. Clear, pale-medium golden color, very young.
On day one, right after opening, we were debating: Slightly cork or not? I would call the scents "sea breeze", others TCA. Over time, it vanished, and some beautiful lime zests and lime oil appeared. On day two no signs of cork at all, just pure lime, hints of smoke and lots of crushed stones. Fresh, complex and beautiful.
On the palate the same conversation. On day two no cork detectable. Beautiful, fresh and straight fruit, lemon zests, lime oil, lots of rock flour. Precision, tension, great balance, wonderful structure and texture. Amazing mineral core. Beautiful length. Dry Riesling can't get much better. Day 1 around 95, Day 2 around 98, so Fanboy 97.

Tasted blind. Clear, medium golden color. Very herbaceous nose, reminded me of "Almdudler". On the palate very mineral, herbaceous, round, powerful, sweet fruit, white nougat. Compared to the Kirchenstück and Schlossberg it seemed a bit rustic and not yet there. Did not detect Saumagen, even though I had this wine three weeks ago :) Needs more time. Tonight 92-93+

Tasted blind. Clear, deep golden amber color. On the palate very fresh, off-dry. No real notes taken. The wine itself was good, around 87-88, but paired with the Risotto it was a perfect match.

Tasted blind. Half of the bottle was decanted.
Clear, pale golden color. Nose from the decanted part quite muted, straight from the bottle more complex, very floral.
On the palate very delicate and floral, herbaceous and mineral. Extremely youthful. Wine from decanter was very good, but not exciting, around 92+, wine from the bottle was way more complex and dense, around 93-94. IMO still way too young. Give it a few more years to fully shine. Nevertheless: Thank you Joachim for the experience! 93++

Tasted blind from half bottle. Decanted for about 1h. Clear, garnet-tawny color. Beautiful classic Paulliac nose, spicy, pencil shavings, some blood, herbs, fine tobacco, very deep and elegant.
On the palate very beautiful. Pure silk, velvet texture and structure. Fine sweet red fruit, some green pepper, high, high ripe acidity, tobacco. Wonderful balance and elegance, long finish. This half bottle is at its full peak. Really beautiful, thank you Oli!

Tasted blind. Clear, ruby-garnet color. Beautiful fine, deep and complex Pinot nose.
On the palate wonderful fine tannin, high, racy and ripe acidity, fine fruit, wonderful balance, elegance and texture. Very deep, very long, fruity, mineral finish. Not yet at its full peak to me. Thank you Alex for this wonderful wine! 94+

Tasted blind, popped and poured. Ice wine made of Pinot in a Blanc de noir style. 215gr/l sugar, 12g/l acidity, 9% abv. Extreme, sweet, complex, very nice. 92-93

Tasted blind. Clear, pale golden color. Fine, fresh and youthful nose with some brioche, hints of oak, mellow apple, very mineral, deep and complex.
On the palate so young and fresh! Fine mousseux, high, racy acidity, very elegant and balanced with lots of fine fruit. Needs time, temperature and air. Evolves with every minute and gains complexity. At first not too long, but that also changed over the course of the evening. Really beautiful, thank you Alex! And there is plenty of room for development. 95+
