When my parents lived in Ft. Myers, the first day I was there I went reef / wreck fishing for grouper and snapper. Yellowtail snapper is a gift from Poseidon.

These only scratch the surface, but you'll get the idea. (Actually there is a cost associated with fishing, but it's much better than going to a market, and wondering how fresh the fish is........ )

Nice. Our dinner:

Meatballs, browned in olive oil; lamb, beef, onion, garlic, sea-salt, mix of Bavarian and Greek herbs;
Japanese violet rice (my favorite rice);
Salad made from fresh spinach from our garden, cherry tomatoes, artichoke hearts.

Accompaniment: Jean-Luc Colombo Cornas 2007, followed by Firriato Nero d'Avola Harmonium 2011

This evening's (six-pound) rib roast; the crunchy bark is a mixture of sea salt, black pepper, red pepper, and garlic.





We had this with fresh asparagus from the garden (olive oil, kosher salt, lemon), a quinoa, olive, and pear-tomato salad, and a 2010 Domaine Tour Saint-Michel Châteauneuf-du-Pape Cuvée du Lion.

Striped Bass Crudo with Popcorn Crema and Shishito Vinaigrette

Recipe from this months Food and Wine mag.
The popcorn crema was super good and the vinaigrette gave it some nice acid balance. Will make again.
Also thinking of other things that would go well with these sauces.

Well, the opposite. 50 minutes @400, 10 minutes @385, then turned the oven off and didn't open the door for 3 hours. Then another 15-20 minutes @ 395 to warm it up for dinner.

Rub is chili powder, paprika, garlic powder, salt & pepper. Sauce is your own creation of soy/honey if you wish or you can go with a proven prepared juice to provide some moisture. I cooked these on high for 4 hours and then simmered them for another half hour.

Broke out the smoker, grill and a friends portable pizza oven this past weekend!
Smoked a brisket, two pork butts and a mess of wings. Grilled a mix of links, fired up many pizzas and spun an amazing pomegranate, goat cheese, pear salad...and German Potato Salad.
Portion control is clearly an issue.

Tonight's homemade pizza. The basil you see is from our garden. Underneath the cheese, invisible to the eye, are slices of peppers from our garden. The crust is made from manioc flour, which actually works as a pizza crust, in contrast to all of the other wretched gluten-free crusts/crust mixes that are on the market. Chebe is a Godsend to those of us who are wheat-intolerant.



Tonight's wines were 2015 Sleeper Sauvignon Blanc (don't bother, it's bland), and 2015 Alina (California white Rhone-style, decent, but for the price, seek out the real stuff).
