Spring bump
Lots of wines now declared.

Burgundy Thursday
CRAZY wines declared. This year’s meal will be a pretty informal bistro menu, although I will put together a special dessert for that ’86 Yquem.

Friday
Champagnes—2x or 1x? I think we’ll have plenty of wine. Mike, Chelsea, HRH and I discussed the possibility of fried shrimp and Champagne—DECADENCE!
Now for the steaks. Bryan’s standard is the 28 day dry age, but am ok if folks want something a bit more funky. I ordered the extended aged Flannery steak “vertical” on Berserker day; I can sample different ages and then report, unless people have a real preference for a particular age. My recommendation is for me to order the meat and have you all reimburse. We’ll probably get a better deal, and more even cuts if we order as a package. We love the California Reserve NY steak but the Ribeye is an option if the majority of people want it.
I’ll do an obnoxious compound butter to top, and add some tweaked steakhouse sides.

Saturday
Just like last year, golfers are welcome to bring their sticks. You could play Wild Dunes, or Kiawah, or we could get a group into our club. I’m cool with some bonus afternoon bottles if people are interested.
I have been in contact with Chef Marc at Circa—lookin’ good.

Sunday
Quite a few people have expressed interest in turning blind Sunday into a lunch event. I am making inquiries.

Please forgive my slightly meek recommendation as a new attendee especially Fried shrimp is very good with Champagne but even better is fried Oysters which may be tough to get and a pain to shuck. A match made in heaven though !!

Our Friday champers is a mag. Will be fun to try out of mag. We absolutely loved it out of a 750 with schwank and mrs. schwank a few years ago.

We'll be bringing some 1973 Huet Vouvray for Saturday dinner in the acidic whites category.

We are still debating our Fri red. And keeping an eye out for a Sat red if we can find a good one. Have some ideas so fear not.

So stay tuned.

(and obviously like the fried shrimp and champagne because who doesn't?)

Agree--we did fried oysters and Dom with mc2 wines a few weeks ago.
btw don't be meek around THIS crowd!
Sometimes we have oysters in early Nov; If early fall is cold, we could have oysters rather than shrimp available. In a perfect world, we'll have both. I'll need some sous-shuckers though.

Ok - another declaration. Prob for Sat night since Syrah - Next of Kyn. Because I'm an idiot (longer story) we can do either the '08 or the '10. Will be in mag form. Definitely on the young side, but did enjoy this wine when we tried it a few years ago.

Which means just need to sort out a red for Friday. Likely something old world. TBD on exact wine.

And of course Sunday - but not saying more on that one.

For Burg Thursday I have 2 x 2008 Jean et Jean Louis Trapet Chambertin Grand Cru.

We need to balance out things with some Northern GC.

I plan to bring 1999 Clos de Tart Momessin and 2007 Comte Georges de Vogues Bonnes Mares for HBT. For Friday, 2002 Piper Heidsieck Rare so far. I will look to bring wines to complement or fill gaps on Friday and Saturday.

We are also planning a bonus bottle for Thursday night - 1988 Faiveley Corton-Clos des Cortons. We'll also potentially bring some grower bubbles if we don't have any champagne declarations (since every meal needs bubbles )

I think we might end up saying 1998 Rene Rostaing Cote Rotie La Landonne for Saturday and then shift the Next of Kyn to the steak night on Friday. Let us know what you think.

Okay folks, it’s getting real; the cast of characters is in place; declared wines are spectacular!! Here in the lowcountry we are enjoying our first cool snap of the season, while still anxiously monitoring the procession of hurricanes in the Atlantic. Evidence of Dorian should be cleaned up by the time you all arrive.

I need final declarations now, especially for Circa so that Chef Marc can do the menu. Let me know if any of your initial declarations have changed. New declarations/amendments must fit existing flight themes.

1. I need food allergies/aversions, both for Chef Marc and Chef S1. I already plan to avoid mushrooms (except in the Bœuf Bourg) and peanuts/tree nuts.

2. Please send me real names (attendee and +1) even though I know most of you.

3. I need to know who is staying for Old and Blind Sunday Brunch (remember that I need to secure a venue). It will be brunch/lunch for those who need to make afternoon flights. Please PM ME the wine you intend to bring; do not post it here (duh). Please do it soon because I will not have time to do last minute research. October is our craziest month between school and church musical events.

4. Our clubhouse rental will actually be free of charge for the Thursday and Friday events so we can afford that pony for our weekend mascot.

5. For the Flannery Steak Out I am ordering Jorge Cuts.
