It’s as the other review here suggesting carbonic maceration along the lines of a Beaujolais Gamay. The palate offers rhubarb, red berries and a tiny hint of anis. The class pours with a very gentle amount of residual gas which blows away an hour in. It’s a very joyful bottle from a producer who I really like. Not much potential for aging however. It’s a sophisticated vin de soif. |

It's not bad wine (although it tailed off in a big way after 90 mins open), but it's not a good example of Jura trousseau, and because it's more about wine-making than it is about place, it's hard to get excited. That said, I'm sure that 99% of today's modern-American restaurants would love to offer this on the list. The kids like it. I'm out of touch. |

But even if Vin Jaune, the yellow wine aged under a yeast 'veil' of Chateau-Chalon has become an acquired taste of sommeliers everywhere, its style draws some inspiration from Sherry, one of world's oldest recorded styles. Vin de Paille, straw wine , where grapes are dried on straw mats, also finds counterparts all over Italy and Spain. And than we come to Macvin, a style that is certainly 'unique' but not certainly 'wine'. |

Marked by old wood in the mouth, mouth-filling, great texture, good balance and very attractive. Great stuff, if a shade expensive in this country (Denmark), as the socalled natural wines often are. |
