March 1, 2010 - Had this last night with Creme Brulee after dinner. It is definitely a wine that needs food. I generally prefer a more rich, weighty Sauternes so I almost feel the need to put this in a different category for judging its merits. This was a light gold color and had a big nose of tropical fruits, honey and botrytis. It had TONS of acidity that seemed to overpower the sweetness(and the creme brulee). There was plenty of honey and pineapple in the mouth but that acidity just overpowered the fruit. This is a "classicly" made Barsac that was elegance in a glass. I'd recommend letting this one get some time under its belt before opening.***
