  June 23, 2011 - Yet another example of why you can't go wrong with 1996 Champagne. 52% Pinot/48% Chardonnay. Compared with the 95 Salon we also had, this is a lightweight - but in a very good way. Very elegant wine. Light yellow color, with a very fine bead. Pears, apples, bread, and a bit of sherry on the nose. Crisp acidity at first, but settled down as it warmed up in the glass. Long finish. In its prime?
