  March 19, 2019 - Beefy, iron, pie cherry, bouquet garni, so deep and savory, hardly like a wine at all. Perhaps more like a curative broth. There's certainly some vinegar here, but it's more like a balsamic reduction on the roasted meat and not spiky or volatile. Magnificent future ahead.
