May 25, 2019 - Similar to my last bottle two years ago. Delicate with cherries, cola, crunchy leaves, lots of almost-tart acidity that is vey well integrated. This drank best right out of the bottle - I opened it mid-morning and monitored it all day. It faded after a couple hours but mostly came back around by dinner time.

This really sang with food (white beans and kale). Somehow it came more alive and seemed less reticent. Unfortunately for us we were down to our last glass by dinner.

I was surprised that this didn’t have more tertiaries honestly. I have three more bottles and will probably wait a couple years before opening another. It’s in a good spot now, but I’d suggest drinking as a PnP (or perhaps on day 2) and with food. This has the acid to go for a while yet, so I’ll ride it out.
