    July 10, 2021 - A touch of honeyed age, in both colour and palate. Clean. But otherwise this wine had no flavour at all, and negligible nose. It wasn’t bad, it wasn’t off, it just tasted of nothing. I thought I had covid, but independent checks showed I could still otherwise taste and smell.
    The almost complete lack of development of a 9 year old wine makes me wonder about long term cellaring under Stelvin. It certainly stops taint, but will it also stop or massively slow development, or make that development quite different?

    7/11/21, 9:46 PM - Thanks, I've been meaning to check in on my bottle. My experience sofar with other screwcapped Aussie chardonnays is a glacially slow development.
