  January 19, 2022 - Drank over the course of 3 nights
  1- crisp and clean. Hints of tropical flavors (mango?) with lemon following behind. Layers of slate minerality. High acidity. Decent finish Paired with roasted chicken nicely.
  2- still going strong. Seemed a little richer with fruit becoming a little more pronounced. Layers of minerality. Finish was long and pleasant. Paired with flounder with lemon butter sauce.
  3- only a taste left. It hadn’t faded but lost some of the richness gained on night 2.
