Kushi oyster tempura, foie gras and chervil foam...

White - Sparkling
N.V. Jacquesson & Fils Champagne Cuvée No. 734 France, Champagne
88 points
No formal notes. Earthy and toasty notes with well-balanced acidity. A little angular on the finish but a nice way to warm up the palate. Very good.

Flight 2 - First Course (3 notes)

Baja scallop and pork belly ravioli 'Open Face' style, D'anjou pear butter...

White
2006 Arnaud Ente Meursault Les Petits Charrons France, Burgundy, Côte de Beaune, Meursault
90 points
This jumps out of the glass with huge sweet and fat aromas of toasty oak, honey, citrus fruits and hints of creamy butter. Big in the mouth with more toasty oak and citrus fruits with a wonderful soft and round finish that leaves a blast of honey lingering. Creamy and rich mouth feel. Medium to full body and medium acidity. Has a ton of oak influence at this point, but stays within reason. This is will be even better in a few years. Excellent. 90+
White
2006 Jean-Claude Bessin Chablis 1er Cru Fourchaume France, Burgundy, Chablis, Chablis 1er Cru
89 points
At first very light on the nose (although following the Meursault didn’t help its case) but after some coaxing offered notes of lemon, minerality and crushed oyster shells. On the palate flavours of citrus and white fruits and beautiful powdery minerality. Medium body, great acidity and a lengthy finish that leaves flavours of sweet citrus fruits on the palate. Drinks well now but a few more years should do this young Chablis good. Very good. 89+
White
2007 Bonneau du Martray Corton-Charlemagne France, Burgundy, Côte de Beaune, Corton-Charlemagne Grand Cru
91 points
Nose of smoky oak (more subtle oak than the Meursault) with citrus fruits and sweet chutney. Smooth, soft and round in the mouth. Medium bodied with a good amount of acid to keep an element of freshness going. Great length. Overall more subtle and understated than the Meursault. A focused and classy wine that needs 5+ years before trying again. Excellent. 91+

Flight 3 - Second Course (2 notes)

Braised rabbit and morel mushrooms, crisp puff pastry and micro greens...

Red
2006 Domaine Bizot Vosne-Romanée Les Jachées France, Burgundy, Côte de Nuits, Vosne-Romanée
90 points
Pronounced nose of spice, cassis and pure cherry fruit overtake the senses. Very obvious VR. On the palate more spice and silky cherry fruit with sweet plum notes as well. Good acid and tannins give this wine a structured feel but the elegance and finesse are what you notice most. Decent length with pure pinot fruit coming through. A wine of great typicity. Really enjoyable now but will be better in 3-5 years. Excellent. 90+
Red
2006 Jacques-Frédéric Mugnier Nuits St. Georges Clos des Fourches France, Burgundy, Côte de Nuits, Nuits St. Georges
86 points
Ripe nose of sweet red fruits and hints of cotton candy. Similar on the palate but quite tight. I would not have guessed Burgundy have I tasted this blind. Because of this (and all the other great wine and food and conversations going on) I didn’t spend much time with this. Clearly very young and closed at this time. Tasty and enjoyable but in stiff competition tonight. Needs time. Good. 86+

Flight 4 - Third Course (2 notes)

Slow roast cornish game hen, vanilla spice and cippolini onions, sauteed mustard greens, crispy shallot risotto...

Red
2007 Domaine Denis Bachelet Gevrey-Chambertin 1er Cru Les Corbeaux Vieilles Vignes France, Burgundy, Côte de Nuits, Gevrey-Chambertin 1er Cru
90 points
Wow this is a baby. Youthful nose of sweet primary fruit with hints of vegetal notes. There are also some spicy notes underlying. More ripe pinot fruit on the palate. The most tannic red yet with a medium body and lengthy finish. Lots of potential here but needs 5-10 years for this wine to really show its stuff. Excellent. 90+
Red
2006 Comte Armand Pommard 1er Cru Clos des Epeneaux France, Burgundy, Côte de Beaune, Pommard 1er Cru
91 points
Pure cherry fruit coming through on the nose with more cherry notes on the palate with some hints of vegetal. Silky smooth in the mouth with good acidity and medium tannins. Lengthy finish giving more ripe red fruits. Perfectly balanced and showing some elegance already. Enjoyable now but 5 years will do this wine good. Excellent. 91+

Flight 5 - Fourth Course (3 notes)

Seared Canada prime tenderloin of beef, traditional fondant potatoes and black summer truffles...

Red
1999 Domaine Méo-Camuzet Clos Vougeot France, Burgundy, Côte de Nuits, Clos Vougeot Grand Cru
92 points
Beautiful nose of baking spice with ripe cherry and raspberry notes with hints of earth and funk. Nose is reminiscent of the Bizot Vosne. At 11 years old, this wine isn’t showing much age at all. Still quite youthful on both the nose and palate with concentrated and rich cherry and raspberry notes. In mouth there’s tons of acidity and structure. Beautiful now, better in 5 years. Excellent. 92+
Red
2006 Comte Senard Corton-Bressandes France, Burgundy, Côte de Beaune, Corton Grand Cru
88 points
Nose offers cherry and sweet cranberry fruits with dried papaya and hints of vegetal. Slightly lean on the palate. Healthy amount of acid and tannins coming through on the backend with some red fruit notes. Quite approachable now (like many of the 2006s tonight) but ultimately needs a few years. Very good. 88+
Red
2006 Domaine des Lambrays Clos des Lambrays France, Burgundy, Côte de Nuits, Clos des Lambrays Grand Cru
90 points
No formal notes. Nose of red fruits with some spice and hints of earth. Well balanced acidity and tannin. Drinks very well now and probably will for another 10-15 years. Excellent.
