Flight 1 - Canapé - a roe thing on a squid ink wafer (1 note)
White - Sparkling
N.V. Bérêche et Fils Champagne Reflet d'Antan
Onion skin colour, fine fizz, dried fruit, sweet at the core, more refined than the last batch, with none of the wildness or the funk. Precise for such a big wine. Super.
Flight 2 - Filllet of wild salmon with lemon verbena, courgettes and shellfish (1 note)

1983 Trimbach Riesling Clos Ste. Hune
Petrol, high toned, oily but fresh, fine, pure, essence of riesling, still youthful.
Flight 3 - Poulet de Bresse baked in hay with new season English potatoes, summer truffle and morels (1 note)

Direct, medicinal, intense dried fruits (hints of Musar in fact, though obviously much finer), young, vigorous and exciting

Earthy nose, almost musty, but piercing fragrance and silky texture, lovely on the palate, with that old wine magic

The flavour profile recalled that of the CSH with its pure riesling note, but the finish was long, sweet, coconutty. Delicious.
