Introduction

Friends we met in Copenhagen 3 years ago are here to dine at several restaurants we have selected for them in Chicago. Tonight was their first and what a great way to start their Labor Day weekend at EL Ideas. They are also going to Smith and the Loyalist, 42 grams, Oriole and Roister with a stop for some wine tasting at Chevalier Wines today and dinner here at our house on Labor Day.

Now I am going contrary to what most would do and. Decanted this btl for about 45 minutes and then back in the btl for 3 hours before serving. Wow what a difference. Regardless of the year, this needed time to open, develop further in the glass and was quite an enjoyment them several dishes.

Had a glass with lamb dish. Good, needed to be decanted but did not have the time.
