Tema: Fusion mellan Sverige och Italien

Amuse bouche: Smörstekt toast fylld med brieost, Philadelphia färskost och tryffelolja och färskt hummerkött
Förrätt: Rödlökspannacotta och Provencalska pilgrimsmusslor
Huvudrätt: Helstekt reninnerfilé med parmesanpotatispuré och amaronesås
Efterrätt: Svensk tiramisu på pepparkakor och punsch

Pre-dinner tillsammans med amuse bouche bland annat.

Still youthful nose showing raspberries, minerals and a hint of vanilla. Youthfully austere palate with a nice structure and a good cherry finish with nice length. More of a rosé to match with food, still a decent showing with a nice structure!
White - Sparkling
N.V. Deutz Champagne Brut Classic France, Champagne

(Disgorged in January 2016) Incipient maturity on the nose showing hazelnuts, apple fruit and citrus. Still very youthful of course with a fresh acidity on the palate with a nice and long lasting bittersweet finish. It's been a while since last I tasted the NV from Deutz. This cuvée was really good with half a year of extra time after disgorgement and would probably evolve very nicely with another extra five years or so.
White - Sparkling
2008 Taittinger Champagne Brut Millésimé France, Champagne

Yellow colour with a maturing nose showing hazelnuts, minerals and citrus to dominate in a fresh youthful way. Palate is very fruitful and with a crisp and bittersweet grapefruit finish. This has evolved very nicely over the last six months and feels like it will continue to improve over the next decade. Best 2018-2033.

(Disgorged in October 2006) Yellow colour with a maturing nose showing raisins, chocolate and apricot. Palate is mature with a smooth acidity combined with a fresh citrus fruitiness and a very nice long finish. Perhaps a bit weak on the mid palate, but with a freshness over the mature nose. This was in a very sweet spot, at least with my taste for mature champagne. Best 2011-2021.

2005 Guy Charlemagne Champagne Grand Cru Mesnillésime Vieilles Vignes Blanc de Blancs France, Champagne, Champagne Grand Cru

(Probably disgorged in fall of 2015) Light yellow colour with a youthful nose showing hazelnuts, lemons and cream. And with some time in the glass it also shows applesauce. Palate is very youthful with lots of acidity and a long fresh finish. This was better than anticipated, with a very good glass development. Best 2015-2020.

Blue red colour with a youthful nose showing green and white pepper as well as thyme. Palate shouws rough tannins that needs more time to smoothen out. During dinner this was a very good match. This was a perfect match to raindeer fillet with potato puré. Best 2020-2030

Deep red coulour with a typical nose of Amarone showing raisings, wet leafs and a hint of vanilla fudge. Palate shows a lovely acidity that is just perfect together with the sweet cherry and raisin fruitiness and is in perfect maturity right now.
Wonderful together with raindeer fillet with amarone sauce and potatoe puré.

Brick red colour with a very nice and mature nose showing leather, forest floor, blackberries and minerals in a very pleasing way. Still enough tannins to keep this on track for years to come and with enough fruit to back it up. Very tasty palate with a lengthy mature sweet blackberry finish. Already showing lots of maturity, but with lots of life left. Just wonderful! Best 2018-2028

Blue red colour with a youthful nose showing minerals, cherries and a hint of vanilla. Sweet fruity palate with a long finish of raisins. Very accesible and available already and at the same time with a long intense finish and potential for further evolvment.
