Introduction

What should have been an small dinner became a battle with the beasts

Flight 1 - The Soft Start (1 note)

Roasted bone marrow with flat leaf parsley/caper leaf/shallot "salad"

White
2011 Domaine François Cotat Sancerre Les Monts Damnés France, Loire Valley, Upper Loire, Sancerre
91 points
A very pretty bottle, a touch riper than expected more generous than the focused and sharp we ted it to be.
We havent had this for 2 years now ( Last rated 91-92) and it has definitely evolved and now shows a very different side to it. 91

2 x 2KG 60 day aged, 7yr old symmington Spanish sirloin ( Sourced from Provenance Butchers)

1990 Domaine Joseph Voillot Pommard 1er Cru Les Rugiens France, Burgundy, Côte de Beaune, Pommard 1er Cru
92 points
Opened and left t rest for a good 30 minutes.
This is now in a special place, gone are the tannins of youth, the sharpness of Pommard. This is now round, silky, earthy of course but still with a solid core of fruit. Nice evolution and a very pure and elegant wine. 92

1990 Henschke Shiraz Hill of Grace Australia, South Australia, Barossa, Eden Valley
95 points
Opened and left to breath for a good hour. We did not decant but for no apparent reason.
This is very very different to what we expected it to be. More Rhone syrah than Aussie Shiraz. With restraint and effortless balance, silky, still very much with a solid core of fruit. Good energy still and has a really long life ahead. What this has that is unique is that it lacks that milky/lactic side we usually come across with Aussie Shiraz ( Including HoG). We wonder if there was at some point a change towards the riper more Parker style. Amazing wine and a solid 95. Lots of life here and with nice evolution unlike Grange that doesnt seem to ever change..

Another superb performance by this great wine. Opened and left to rest for a good hour and served alongside a to a tough crowd. And it delivered in full. For lovers of old school and evolved Napa Cabs this is like a holy grail. Very much alive and vibrant, well evolved fruit but still with primary element, silky tannin, good acidity and with a leathery , herby signature on the finish. We can go on here but really not needed. Superb 96-97

2006 Mollydooker Shiraz Carnival of Love Australia, South Australia, Fleurieu, McLaren Vale
This is a proper beast. We decanted but with little impact and even the morning after what was left in the decanter was as fresh as out of the bottle. Big on the ripeness, oak and with a 16.5% alc to go with it. What was unfair to it, and thus the no rating, is we served it after a line up of classics and thus stood out a lot.
This is not for the faint of heart.

1990 Château Lagrange (St. Julien) France, Bordeaux, Médoc, St. Julien
94 points
Decanted and served blind. We went for late 90s Napa, like a Montelena Cab.
Another data point ( Along with the 1996 which is a Papies favorite) that Lagrange in great years produces amazing wines. This 1990 was juicy and ripe, fresh and felt 10 years younger, full of energy and just an excellent, elegant and classic wine. This is a buy on sight wine. Solid 94

1983 Domaine Jean-Louis Chave Hermitage France, Rhône, Northern Rhône, Hermitage
92 points
This is now on its last few legs and granted at this age is more the bottle than the wine still this felt on the fragile side.
The nose was classic and superb Chave, meaty smoky and easily the best thing about this wine. This is a nose to savor and treasure. Unfortunately on the palate this did not follow ( No Mouline 1983 here) but still was a great experience. 92

Flight 3 - The Finisher (1 note)

Red - Fortified
1935 Tuke Holdsworth Porto Vintage Portugal, Douro, Porto
Bought at auction by a friend, no label, no clue other that is a very old port. The solid cork gave us the data we needed both name and vintage one it clearly stated.
Decanted through a filter for a good 3 hours and this could have used more.
Soft but spirited, gentle and elegant but with a lot of presence in a way that only old vintage port can walk both paths at the same time. Impressive and an excellent experience. No real need to rate.
