2019 Gonzalez-Byass Tio Pepe Una Palma Fino
90 points
6 years old (so couple of years older than regular TP). Nutty, furniture polish, marine. Very yeasty, a little mushroom. Long and chewy.

Super clean nose - butterscotch? Even dryer and finer than the Fino (which is from the same solera) - so bone dry it's Saharan. Rancio developing - walnut oil. There's richness but it's hard to appreciate!

Lovely amber colour. Marmalade and spice. Cumin Gouda. Rehydrating morels. Not medium-sweet - it's sweet AND dry at the same time. Ridiculously long finish. Wow, wow, wow.

N.V. Gonzalez-Byass Jerez-Xérès-Sherry Matusalem 30 Years Old Oloroso

A bit musty on the nose - slight TCA? Blend of Oloroso and PX at age 10. Dark caramel, coffee, woodiness. Not that sweet (despite 125g/pl of sugar!). Raisins on the finish.

Holy cow. Pure PX. 400g/pl of sugar. The fattest legs I've ever seen on a wine. Raisin puree, cinnamon. Would love this over vanilla ice cream, but as a drink it's more impressive than enjoyable. (Edit - I actually finished the sample by pouring it over ice cream.)

So big. Lots of acidity. Toffee apples. 200g/pl of sugar. Perfect balance and very, very good.

I'm not sure I can actually deal with PX - but I love Palo Cortado
