Dinner at the Papies

Introduction

We haven't done of these dinners for some time but when the opportunity arose the old set of principles of Great Friends, Great Food and of course Great wine were once again in abundance in Lizzie St.

Flight 1 - The Welcome (1 note)

Olives & Cocaine - Nocellara Olives, Pan Carasau
Red Prawnctober Rising - Gambero Rosso ceviche
Suck-it to me baby - Gambero Rosso head lightly poached in butter and paprica

White - Sparkling
2002 Billecart-Salmon Champagne Cuvée Nicolas François France, Champagne

Two very consistent bottles o the day and very much consistent with our earlier 2 tasting of a worthy 93+.
Well aged and well evolve, lovely richness and also soft vibrant feel. Definitely one to drink sooner than later but also delicious now so why wait. 93+

A very pretty wine once again ( our last bottle of the wine that launched our serious wine journey and albeit not as exciting as the one we had 9 month sago ( Papies 96) still a magnificent and effortlessly elegant wine. Well evolve, nice soft dark fruit undertone to the red fruit nose, light earth, silky and delicious. Thank you for the 15yr journey old friend. 94 this time.

Flight 3 - Surf & Turf (2 notes)

Basqueland - King Scalop served side by side with Secreto Iberico with a smoky sweet potatao & parsnip mash

A wine that keeps on misfiring recently, muted and not expressive and definitely the outlier in the 90s line up of vintages that Chave has produced. We have left this in bottle overnight to observe over the next few days, maybe its in need of a much longer decant. Pont less to rate now.

Opened and left to open up in the bottle but we should have decanted.
Another magnificent show ( Especially following the misfiring 1996 we opened earlier Papies NR) , soft smoky. dark fruited, light herby and with sot spice. Elegance and class in a bottle and worthy once again of the hype. 95-96 and with good life ahead.

Opened and left to rest and frankly the wise choice.
3rd time we try this and a magnificent 98 once again. Last time 5 years ago almost to the day we said we dnt really need to say anything else about this wine but its just shy of perfection. Frankly this could well be perfect . 98+

Flight 5 - Celebration of Fat - AKA Kobe is for those that don't know beef (2 notes)

3 expressions of Pure Beef all 40day+ dry aged just charred in the Egg with just salt.

Decanted and served.
We are big lovers of 90s Napa and this was another nice example until you get to the point of the slightly burnt fruit that robs the wine of elegance and makes it light porty and unbalanced. A good 91 nonetheless but far from the mark of what Napa delivers in that period of time.

Our last bottle and albeit we rates the others 95+ on this occasion they wine was not of the same caliber.
Not bad or flawed , just buttoned down and lacking a charming side and unfortunately elegance that the quality and pedigree usually dictate. Not sure what to say here but not more than a 92 and that may be out of pure respect.

A massive wine but also shame on us for opening this this young.
Rich and with a lot of palate presence in that amplified way that only SQN can deliver and albeit punched a couple of our friends that are not used to this level of power in the face we forgive it. We can make new friends its ok. Shame on us for opening it now and a bit pointless to rate.

Flight 7 - The Sweet (1 note)

Chypre! - Candied whole walnuts in syrup with Kataifi Baklava & Strawberries.

White - Sweet/Dessert
1976 Château d'Yquem France, Bordeaux, Sauternais, Sauternes
Base of next and bottle 3 of 3 of the same batch.
Dark in color of course , dark glossy caramel, liquid gold as only Yquem can be and albeit this not being the best representation of this noble wine ( Bottle was not the best looking) still had all the hallmarks of the class and nobility that this wine brings. Last few times we felt it was 94-98 and this time was not exception. We will not score however as one should not and must not try and put a number on what this wine is and means. We will just tip our hat and say thank you for the honor.
