Introduction

Hard to believe that it has been 2.5 years since we last got together post-COVID. It took two minutes for the gap to evaporate!

Flight 1 - Aperitiv (1 note)

The 'amouse bouce' was beautiful and segued into the first course with the restarant's entry-level Champagne.

From the restaurant list and presumably a more recent release than when i last drank this in 2018. Light silver gold. Moderate mousse and bead but lovely tiny bubbles. Nice yeasty and quite heady weight on the finish. A nice aperitif but was 'challenged' even by the first food dish of raw French prawns cerviche. To be fair, it is the restaurant's cheapest Champagne, but I think they could do better. 88 pts includes the lovely restaurant ambience.

Flight 2 - Raw Bar & 'Yaki-Frenchy' followed by 'French Skate Wing on the Bone' (1 note)

Wow....no pre-mox here and just a delight of how transcendent White Burgundy' can be at its prime,

Soaked but solid cork. Decanted for an hour before re-bottling for the restaurant. Served 2 hours later over 2 hours. Deep but bright hay-gold colour. Immediate nose on opening of new tennis balls. Immediate opened fresh palate - acidic, lightly torched whole lemons…. no pox here, yay! Immediate ‘power without weight’ resonance and reverberance insid the head. Stunning! At dinner, oh wow, OMG nose… so much more open and rounded out and expansive…melted salted lemon butter. So good. Very subtle blowtorched lemon skins. Hay barns. Palate is high-intensity total acidic freshness and lemonness… sensational. Really resonant inside the cortex on a very long and ‘power without weight’ sophistication. This has years ahead of it because it is still a baby. 95+ for sure...when these 'sing' they really 'sing'.

Flight 3 - Frenche Bresse Duck 'on the bone' and Cheee (1 note)

I drank another bottle from the same case last week.....it is insane, and can only get better.

From Greg, from a case of 12 he and I bought on release. Decanded too briefly for 2+ hours on arrival at the restaurant but saved for another 2 hours (I last decanted a bottle for 8 hours last week which seemed better). That said the wine just 'sang' from first pour. Incredibly linear and 'Alice Down the Rabbit Hole' from first impact on the nose through to the ridiculously long reverberant and resonant finale on the final swallow. This has a lean elegance that requires a bit of experience to truly appreciate....and it has only just entered it drinking window, so give it another 10+ years to appeal to a wider hedonistic audience. Wow...this is a very high score on my scale.
