White - Sparkling
N.V. Egly-Ouriet Champagne Grand Cru VP France, Champagne, Champagne Grand Cru
95 points
Golden amber color. Nose of ripe fruit. Mint, yellow apple, honey and dried fruit. Velvet soft. On the palate, the wine appears ripe with slightly oxidative tones. Citrus and apple fruit. Delicate acid. Balances nicely between ripe and powerful fruit and a vibrating acid. 2002 base.
White - Sparkling
2000 R. & L. Legras Champagne Grand Cru Saint-Vincent France, Champagne, Champagne Grand Cru
92 points
Nose with butter, nuts, oil, almonds, gunpowder, and hung meat. Misses fruit aromas. Soft. The palate is ripe, and the taste is relatively long. Ripe fruit, baked lemon, and some malt.

Flight 2 - Mature whites (2 notes)

White
2002 Daniel-Etienne Defaix Chablis 1er Cru Côte de Léchet France, Burgundy, Chablis, Chablis 1er Cru
92 points
Golden dark, bright yellow. The nose opens with delicate sweet fruit. In the background are scorched matches, rubber, oil, and minerals. Viscous and oily. Apricots and peaches, as well as petrol, oil and lubricants. Surprisingly bold for a Chablis.
White - Off-dry
1999 Zind-Humbrecht Pinot Gris Clos Jebsal Vendange Tardive France, Alsace
94 points
Dark amber against bronze color. Nose of sweet fruit, somewhat fortified with honey, dried meat, and tea. High viscosity. Flavors of dried fruit, sweet orange, caramel, and browned sugar. The wine still has lots of acid and is experienced as balanced.

Flight 3 - Mature reds (6 notes)

Red
1970 Renato Ratti Barolo Marcenasco Italy, Piedmont, Langhe, Barolo
87 points
Nose of tar, quay, salt meat, some mint, soy, smoked meat, tobacco, and leather. Not much fruit is left on the nose. High acid. Sweet and sour fruit, and after a little air the fruit becomes clearer red. This was more interesting than good.
Red
1999 Château La Mission Haut-Brion France, Bordeaux, Graves, Pessac-Léognan
92 points
A power pack. Heavy and powerful. Nose of dark fruit. Earthy, and a rocky minerality. Cellar. With air, the wine becomes rounder on the nose. Red fruit, cola, cherries, and perfume. The palate is powerful, heavy but bright fruit. High concentration. The finish is perceived as a bit grainy.

Red
1993 Bodegas Vega-Sicilia Ribera del Duero Valbuena 5° Spain, Castilla y León, Ribera del Duero
94 points
Deep dark red, no transition. The nose is reductive with a little barn and fart, but this blows away quickly. Brilliant red fruit, caramel, earth, and tobacco. The palate has tart fruit, cherries, and pepper. High in acid. Soft, ripe tannins. Long, delicate, and fresh finish. This har several years ahead of it still.
Red
2008 Rivetto Barolo Briccolina Italy, Piedmont, Langhe, Barolo
94 points
Dark to black fruits, and some tar on the nose. High concentration. On the palate the wine is tight. Lots of tannins with a heavy grip. Dark fruit, pharmacy and tar.
Red
1997 Antonio Bernardino Paulo da Silva Colares Chitas Reserva Velho Portugal, Lisboa, Colares
92 points
The nose is floral and feels velvety soft. Cherries, dark cherries, leather, and generally dark fruit. The palate is tight. Mint, cherries, dark cherries, pepper, and tomato stem.
Red
2008 Domaine Robert Chevillon Nuits St. Georges 1er Cru Les Bousselots France, Burgundy, Côte de Nuits, Nuits St. Georges 1er Cru

Concentrated deep nose of juicy bright fruit, perfume, and some metal shavings. Grippy dry on the palate. Bright red fruit. Strawberries and raspberries.
