Flight 1 - Sparkling wines (2 notes)

We started out with a couple of sparkling wines to calibrate our palates.

White - Sparkling
N.V. Ferrari Brut Italy, Trentino-Alto Adige, Trentino, Trento

Light yellow color with a green hue. Aromas of slightly sweet yellow fruits and flowers. Small bubbles that finishes a bit fast together with the taste. Some yellow fruit, but a hard acidity and a tight bitterness.
White - Sparkling
N.V. Canals S.A. (Ramon Canals) Cava Brut Nature Spain, Cava

Light yellow color. Sweet and fat aromas of red apples and ginger. Similar notes on the taste. Fairly masculine. The bubbles are short and I find it to lack some acidity. Nice glass but nothing special.

2003 Château Grand-Puy Ducasse France, Bordeaux, Médoc, Pauillac

Black to dark red color. Powerful nose with coffee, chocolate, dark cherries and blackcurrant with stems and leaves. Cool fruit first over the palate, clean and refined fruit with a vegetable notes of currant leafs. A good deal of bitterness and dark chocolate on the midpalate. Fine length and structure, but a bit hard and tight now. I'm affraid it might be lacking a bit of fruit for the long run.

Dark red color. Nice nose with cherry, compost, earth and a barnyard note. Surprisingly rustic. On the palate it has some cherry. Soft and pleasant, but a bit unclean and hazy. Good length and good balance. Ultimately this is drinking quite well now, but this bottle seemed more developed than I would have expected.

Dark red color with a brick red hue. Youthful clean fruit, blackcurrant, on the nose, but also notes of earth and cedar. On the palate it has nice blackcurrant and cherry fruit, that leaves room for some tobaco and cedar on the midpalate and finish. Very nice balance and good length. Drinking nicely now, but will develop well for another decade.

Dark red color with a slightly orange hue. Sweet cherry liqueur jumps out of the glass with a barnyard undertone. Very straight-forward blackcurrant on the palate. More refined on the midpalate with some tobaco and leather. Good balance and length, still with nice tannins.

Dark red color with a clear browning rim. Clearly aged Bordeaux nose, blackcurrant leaf, cedar and a bit of prunes. A little unclean and hazy in the fruit, showing a vegetable note on the midpalate. Some prunes pop up on the finish. The tannins are pleasant enough.

Dark red brown color. Showing clear signs of age. Leather, sweet tobaco and prunes on the nose - surprisingly a good deal of sweetness. On the palate it is well matured, with prunes, leather, tobaco and some cedar at the end. Good length. This is just peaking right now, and probably for a few more years.

Dark red brown color. Very nice nose with licorise, prunes, sweet tobacco and notes of strawberry. Juice fruit on the palate, and great balance and length. First showing a bit of strawberry and red fruit. Lots of nuances, such as leather, tobaco, sweet licorise and prunes, on the midpalate and finish. At its peak.

2000 Roger Sabon Châteauneuf-du-Pape Reserve France, Rhône, Southern Rhône, Châteauneuf-du-Pape

Medium red color with a brown rim. Barnyard and animal sweat jumps out of the glass together with a bit of earthy raspberry. Slightly hazy on the palate, but nice rustic nuances. Good length.
