11/6/15, 8:06 AM - If you attempt to aerate or decant these young Nebbiolo for any period of time they will shut down completely. If you drink them young they need to be pop/pour. Traditional Barolo/Barbaresco don't behave like other varieties - they're a different paradigm.

Describing the progression and texture of a wine can be really difficult through text but I can't overstate how well constructed this wine is. I found the Sensibility particularly noteworthy (bought a bottle) when I visited over a year ago. It's a very alluring wine indeed and an exceptional representation of Grenache from the area (75% Grenache, GSM). There are also some wonderful baking spice notes (including some brown sugar) that are layered on the palate and contribute to the femininity of the wine. Very expressive and harmonious on the palate while maintaining some degree of restraint.
