The wine looks ruby colored. The legs are slow. There is no sediment in the bottle. It smells like blueberry, blackberry, mushroom, forest floor, smokey bacon, cedar and black pepper.

Very pronounced tannins.
White - Sparkling

The wine looks straw colored. The legs are fast. There is no sediment in the bottle. It smells like mineral, biscuity and almond. It tastes like almond, biscuity, leesy, mineral and lemon.
Red - Sparkling

Dry sparkling Shiraz from an Australian winemaker transplanted to California. Drier but also somewhat more fruit-forward than Chook.
Accompanied New Year's Day Black Eyed Peas and Kale, cornbread.

Great body and substance. Rich fruit and oak with spicy finish. A real Colorado gem.
White - Fortified

The acetaldehyde really does dominate. I drank part of the bottle and the rest hung out in the fridge for a month or so. I tried it again with some toasted walnuts and the pairing improved both Sherry and walnuts. This was my first experience with Fino--will try next time.
