12/22/23, 11:05 AM - Pop and poured, then enjoyed over ~3hours.

It was ready to go and definitely didn't need a decant, but still improved with some air. No signs of fading even at the 3 hours mark.

Great complexity, purity of fruit and pastry aromas. Soft acidity, elegant mouthfeel and lengthy finish. Definitely my favourite NV I've had to date.

Deep gold colour.

Pronounced aromas of baked apple, brioche, fresh biscuits, apple pie, tangy lemon, ripe quince, pear, marmalade, walnut, ginger.

Pronounced palate.

Medium body, high acidity, creamy mousse, long finish.
