    September 18, 2017 - Still feels very primary, took a while to open out. Mousse is fine and disappears quickly though in a zalto universal. Fundamentally, not that balanced. I think time might help a bit to smooth out the initial aggressive acidity, but I suspect it entering its somewhat disappointing peak now. Use a flute/narrow glass.
