December 6, 2016 - Slightly disappointed. Posting this note weeks after consuming, however not as dry as I was hoping for. Certainly a unique sparking wine, did not pair with food.

July 27, 2015 - Clear pale straw. Toasted oak, vanilla, pear. Medium to low acids, no tannins. Small bubbles. Pear. Short acidic finish. Tasting room.

June 19, 2015 - Paumanok Visit with Charles and Kareem: WOW... now i am not a huge sparkling wine guy, but this was very impressive indeed. deep citrus and brioche nose, a hint of cassis, baked apples in the mid with great balance and refreshing acidity. good finish. YUM
