December 10, 2021 - Dom Perignon P2/P3 Dinner (New York City): (En Mag) My favorite of the 1993 flight. The format really shined here. Was this young? Absolutely. This will be ready in 2051. Was this enjoyable? Absolutely. I got a lot out of this bottle even if it did like the patina I so enjoy on older champagne.

December 10, 2021 - DP Extravaganza! (Friend's place): From a magnum which is always a positive although this is quite young as well and a bit more on the tight side and funnily enough I'm finding myself again liking the regular DP quite a bit since it can show some age. This is the wine for 50 years from now.

February 11, 2018 - Michelin Stars come to George Trois (George Trois Winnetka, IL): OK. First notes hear. Light Amber color, good nose, nice palate feel, good bubbles and good finish. Will it develop? Try in a couple of years. Still youthful.
