Introduction
Our friends don't half bake things - this was a full out event with professional decoration, top notch food and of course some pretty crazy wine.

2008 Dom Pérignon Champagne

From a jero. Not sure why big bottles formats seem to have such a bigger impact on champagne but they do. This was young and lovely and bright and of course too young but still very sippable.

2003 Dom Pérignon Champagne P2

Surprised me quite a bit because this was a hot year and not one that I'd necessarily think of for champagne. One of the better ones in the flight though. Toasty and nutty. Maybe a bit of marzipan. More flavorful . It was served at exactly the right temperature - slightly cool but warm enough to be perfectly expressive.

This is maybe the wine of the flight that is most likely to age through. It's sugar cookie, bright, maybe a bit nutty and brioche. It's got a bit more spine than some of them.

Most ppl's favorite of the flight but this was actually my least favorite (still enjoyable). It's very crisp and sharp and angles. Butter and toast and all of that but just missing a bit of the fission that some of the others had.

1999 Dom Pérignon Champagne P2

So I was maybe one of the only people who really liked this one but I thought it was drinking pretty well. It's the only one with fruit in the line-up to me - this was granny smith apples, maybe a bit of vanilla, reminds me a lot of apple pie. It was tasty.

So the clear winner of the flight to me. It's toasty and nutty and showing more age than the rest (which I like). There's a second layer to this wine that the others haven't developed yet. Lovely.
Flight 3 - Second Course (4 notes)

1996 Moët & Chandon Champagne Cuvée Dom Pérignon

So sacrilege but this was my favorite of the '96s mostly because it was the one that had the most age on it. This has the secondary notes. It's not quite right but there's a stewed white fruit style to it (but in a good way). Surprised me. Split the table.

Very similar to the regular DP - they are more alike than they are different. Same almost background of stewed white fruits. While the regular was more advanced this is still a bit younger and less powerful.

So interestingly enough I liked this more than the Oenotheque which was not the consensus with the group. This is the youngest of the three and my opinion was based totally on promise. This with age struck me as the wine that was likely to win. Plus it had a bit of pear and vanilla in there and I am a fan of the champagnes that have a touch of fruit.

Marble Potato Mousseline, Shimeji Mushroom with Alba White Truffle & Aged Tofu
(Although of course ours didn’t have the mushrooms)
Rosé - Sparkling

Again the clear winner of the flight. This was really something. It's young and really one shouldn't be drinking it now but so it goes. This was bought directly from the estate so as fresh as it can be. Lots of berries and young and bright.
Flight 5 - Fourth Course (4 notes)
Honey-nut Squash Soup with Crisp Quinoa & Langoustine
White - Sparkling
1993 Moët & Chandon Champagne Cuvée Dom Pérignon

Nice and fresh and perhaps the lightest of the regular DPs that we had this evening. I don't think of '93 as being much of a year but I'd be inclined to agree with our friend who calls it underrated. Mostly I get the vanilla bean coming through here.

From a magnum which is always a positive although this is quite young as well and a bit more on the tight side and funnily enough I'm finding myself again liking the regular DP quite a bit since it can show some age. This is the wine for 50 years from now.

This surprised me quite a bit. It's got more going on than the Oenotheque or the P2 at this phase whereas I'd have expected it to be even tighter. The champagne is almost creamy in nature. More fresh and kindof a bit spicy.
Flight 6 - Fifth Course (3 notes)
Warm Ocean Trout, Green Apple, Vanilla & Elderflower Dashi
White - Sparkling

First impression is this is all acid and it's almost too much. Needs some time to integrate in the glass. With that you start to get almost herbal notes. Gets better, but wasn't quite there for me.
Flight 7 - Sixth Course (2 notes)
Maine Lobster, Parsnip, Poached Pears & Buddhas H&
White - Sparkling
1985 Dom Pérignon Champagne P3
France, Champagne
From a magnum. Again really fresh, kindof toasty, this was lovely but in magnum format felt like the wine needs more time. We love the regular P1 of this which has been in a great drinking window these last few years.
Flight 8 - Seventh Course (4 notes)
Prime Tenderloin with Foie Gras & Red Wine Braised Cabbage
White - Sparkling
1971 Dom Pérignon Champagne P3
France, Champagne
The point in the night where the notes get a bit less strong. This was a very pretty wine. Perhaps the one I was most excited about as the regular DP from this vintage was a favorite of mine at a 70’s champagne tasting we did a few years ago. It’s still quite young though and perhaps not as expressive as I’d have expected. Long time to go. The perfect wine to serve if you are a 71 birth year and plan to live to 90.

Rosé - Sparkling
2008 Dom Pérignon Champagne Rosé
France, Champagne
Not yet commercially released but that is the fun of doing dinners with the LVMH team. Again comes across as a bit sweet. Tons of berries. Very similar to the impression I had of the 2006 at La Fete. Needs more time but it is a fun wine.
Closing
Honestly it was almost a bit much. By the end of the night not sure I was tasting really all that much. But it was certainly fun! In addition to the wines listed here there was a blind flight of reds - 90 Rayas Pignan, 83 Chave, 89 La Fleur Petra’s and 64 Ausone. While I took some notes on those not sure they are worthy of being posted. Overall an exceptional evening.
