    December 26, 2023 - April 2016 disgorgement. Had this with our appetizers at a steakhouse and this bottle didn’t last long at all. Notes of green apple, cherries, bread, yeast, almond, and lemon. Felt like the perfect amount of dosage (though I was informed there is no dosage in these wines) - perfectly balanced, med+ acid and a long finish. Really enjoyed by the table.

    Bubble still lively but not disturbing.

    Pure nose, it is floral and on white fruits like almond, a little coconut and lychee.

    The mouth has a creamy but frank attack at the same time. The juice is magnificently pure, always with this mix between jasmine and the white fruits described on the nose. Aeration will bring out slightly more evolved candied aromas. Impeccable balance with a magnificent freshness that elevates the wine. Crystalline and chalky finish which unfortunately lacks a bit of length for my taste to perfect a high-end overall picture.

    Excellent, too bad that the length in the mouth is a little disappointing to pass a course, especially since the prices on the creations of Cedric Bouchard have experienced a big increase in recent months.

    February 3, 2023 - This wine was singing out of the bottle. Ripe, concentrated orchard fruits are backed with a chorus of layered acidity. Like with many other Bouchard wines, this one hits you hard with its fresh intensity.

    However, as a member of my table describes it, this wine felt like a firework. Dazzling, but quick to fade. Drink within 30 minutes of popping - the wine quickly falls apart after. Apparently this is a trait that exists for boloree even when you drink it at a younger age?

    This is the perfect bottle to bring if you want a pop and pour champagne that would impress at a bottle share with 6 people - the perfect audience size to enjoy the fireworks together.
