    2012 Dom Pérignon: This was a firecracker. So lively and, for me, the Champagne of the night. Flinty on nose - which is a surefire way to my wine-tasting heart. H4.

    January 24, 2024 - Dinner at Iki Ramen vol.II (Iki Ramen, Los Angeles CA): The nose is deep and flowing with gorgeous tones of red apples, quince, nectarines, pears, biscuits, bakers' vanilla, warm dough, toast, and yellow flowers. The Medium bodied feel shows off a lot of depth and refined texture along with crisp, high acidity. The finish really doesn't quit and this is a real delight across the palate. This is evolving beautifully and is showing so well right now. There is plenty of life ahead of it and it will be extremely fun following along as it ages.

    December 31, 2023 - Popped and poured. Drank over 2 hours. First bottle of a case purchased upon release. This is drinking very well now. This 2008 comes across richer and more on the orchard fruit spectrum than most Dom vintages. Vibrant acidity keeps it well balanced. These should drink well for many years to come. Excellent.
