December 10, 2021 - Dom Perignon P2/P3 Dinner (New York City): A touch behind the 82 but still very good. What a duo. Where the 82 showed a bit sweeter, the 83 showed a bit earthier. Great compliments to one another.

December 10, 2021 - DP Extravaganza! (Friend's place): Almost a bit sweet in style. It's very pretty. A bit herbal. A hint of dusty to it which is interesting. Drinking well though.

January 23, 2021 - On the nose, we travel to a pastry workshop: marzipan, buttercream, speculoos, all coated with a lemon zest.

The palate is fantastic. This champagne is a call to travel. The touch is creamy, soft, which prepares the palate for an extremely full and juicy substance. The freshness is just incredible with a very lively tension that stretches the material even more.
Nuts dominate on the palate, notably almonds and hazelnuts. It lines and coats everything it touches but it remains airy and delicate at the same time.

Magnificent finish, where a floral register is revealed which increases in power, giving the impression that the wine remains in the mouth on a bed of flower petals. Grandiose length. Tracing and precise, while being of exceptional elegance and generosity.

I drank some nice bubbles, but this champagne is extraordinary, a bottle of emotion.

June 29, 2016 - Ten Days in Burgundy, Champagne, and Paris; 6/24/2016-7/6/2016: Fantastically expressive and unique nose spanning sulphur, creamy coffee, crisp celery, and speculose. The palate completely melts with caramel and butter with a squeeze of lemon citrus in the back. Traces of smoke as well. Reductive but incredibly fresh. Don't know much about '83 champagne but this was a real curve ball from the winemaker that left everyone very impressed. Released as a P3, not an oenotheque.
