April 27, 2023 - Bienvenue a Champagne; 4/20/2023-4/29/2023 (Les Crayeres, various restaurants, Les Avises and a many wonderful producers): Off the list at Sacre Bistro and quite enjoyable to me although probably the wine that we should have looked to end with rather than the starter. It’s the darker form of rose. More almost brambly and darker fruits (think blackberry). I find myself quite liking this style esp as I imagine pairing it with food. The wine evolved a lot and actually I think was drinking it’s best after more than an hour in the glass.
