March 6, 2005 - Clear, light yellow color. Moderate residual sugar. Apples and pear with moderate acidity. After letting sit in in recorked but non-gased bottle the sugar and fruitiness simmered down and a more elegant, finesse wine with nice structure was present. Went well with a Mediterranean orzo and blackened chicken salad that it was paired with.
