  October 27, 2010 - This wine is a great example of how standard Bordeaux grapes (Cab Sauv and Cab Franc) can taste so different in a new terroir. Color on this was hard to gauge as we were in a relatively dark restaurant, but it was certainly deep and the concentration was beautiful.
  
  Pre-decanter the nose was dark red fruit, cherries and prunes, with notes of bitter herbs and coffee. Much warmer than Cabs in the Bordeaux area, no green pepper here. The palate was very full with a strong backbone of acidity and the tannins were tight and needed air.
  
  Post-decanter the nose opened into something much more complex. The fruits began to soften and the smells of roses, cocoa and autumn leaves also came to the top. The palate was full and rich but the bitter herbs gave it balance. The acidity and tannins were still very present, but their high quality became clearer and the medium to long finish was more testament the care that was put into making this wine. The strong structure will allow it to age with grace for at least another 5 years.
