Community Tasting Note

Tuesday, July 27, 2021 - Vice Versa weekend and dinner: Locked, loaded, and tight as a drum, the 2016 Pavie is SUCH an infant all it needed was a pacifier and its blankie to get it all set for its requisite hibernation for the next 15 years. The precision on this wine is absolutely unmatched, as is the barely budding sense of perfectly honed and pure fruit. But holy hotcakes and caviar, this sinewy boxer is all business in its current state. Academically, it’s absolutely worth experiencing, but it is nothin’ but needles on the finish, even with hours and hours of air. All that said, I absolutely loved it! I loved it in a more scholastic way to be sure, primarily because if any wine on the planet has the potential to be a gladiator after two decades have passed, its this Pavie. I wasn’t worthy to try this wine yet, but was grateful to have been given the opportunity to check it out. It’s an fistful of fruit just waiting to cluster-bomb your palate. Hold the 2016 Pavie until they do a reboot of “Top Gun 2040: A Space Odyssey.” 95-97+ points.

8/1/2021 11:06:00 AM - It's really not even fair to judge this wine right now because it is so LOCKED AND LOADED that it's only a best guess as to how it will all shake out. But shake out is what it in fact needs to do...over the course of a decade or two. It's serious stuff.

I'll hold the rest of it, but you can drink it now due to the dominant Merlot.. So, if I were to tap this Pavie, from what you said here, I don't think I would regret it right? It's not going to be overly tannic at this stage? Shutdown? Your thoughts?

As much as I love prematurely popping a fancy bottle of wine just to see what's under the hood (especially if I have a half-case to mess with), I gotta say that this wine needs a ton of time to get even remotely close to its potential. Academically, it is quite the phenom in the making of course. However, you will likely get mostly pins and needles from this wine if you open it now. I did love being able to sample this wine throughout the course of the evening and contemplate its many budding elements. But again, it is just so primary and linear right now that its nerviness completely outweighs any nuance. But hey, the last thing I ever want to do is to stop someone from popping a bottle. Just promise to post a tasting note if you do! :) Cheers!

I'm super impatient as it is, but it's also a bummer to blast an expensive wine prematurely and get less dividend than desired. Timing is always a crapshoot, but in this case, Rome wasn't built in a day, and all that...
