Wednesday, February 15, 2023 - Drank for Valentine's Day with Steak filets. Decanted for 8 hours. I'm not the biggest fan of deep heavy Cabs, and I was curious how this would match up against the Cabs I've had in the past. This was very different from some of my previous experiences with Cabs and is the best Cab I've had to date! Like other notes, the palate was full of medium to dark berries with a lingering taste of black cherry, cedar wood, and anise. This was smooth like velvet with a long finish that kept going and going. I wanted more complexity here, but I think that's more of my wine preference than the wine itself. This will improve with long cellaring, but if you open one now, give it a long decant. 94-95 today
