Thursday, December 7, 2023 - Nose starts with some reduction but also showing a wonderful and bright citrus vein - some orange and orange peel and lemon. Palate has nice grip and peach pit - very bitter with iodine - Shells. This is cut and citrus and minerally. Lovely. Nose - 5.5/6, Palate - 5/6, Finish - 5/6, Finish - 1-1.5/2 = 16.5-17/20.

Day 4: Wow this is good. Nose is chewy and showing some salty popcorn and minwrals, iodine, lemon and lemon peel and some orange peel, chalky or slatey or steely, talc or somehtjny with texture, very bright and sharp in a good way. Palate is excellent as well - salty minerlas with lemon, great grip. Really lively and potent with some Iodine. Nearly explosive as it goes into the long and saline finish with hints of the iodine and lemon. Nose - 5.5/6, Palate - 5.5/6, Finish - 5.5/6, Finish - 1.5/2 = 18/20.
