Saturday, December 16, 2023 - Saturday Afternoon Bordeaux (K&L Wines, San Francisco): Very deep ruby with slightly lighter outer 10%. Fascinating perfume of dark red fruit and herbs. Much less dense than any of the 2020 or 2019 wines, almost shockingly so. Gorgeous combination of fruit, minerality, and green herbs (? more Merlot/Cabernet Franc than the younger Pauillacs). Unresolved tannins leave a gritty, dry finish. Outstanding now and should be great in 20 years once it sheds its structure.

I probably would have used the words 'more resolved' or more 'balanced and integrated', myself. I have had a few wines that were so old they were devoid of structure, but still very enjoyable for what they were but overall, I want my wines to have some 'structure' holding them together and supporting all the elements. In fact, I have found looking back on my CT notes with my own drinking over the last couple of years, I'm referring to structure more and more while noting less and less the actual tastes/smells involved in a bottle. I guess that's why his phrasing in this note struck a cord with me?

    12/17/2023 8:00:00 AM - 2001, it came across as an ambiguous statement to me. If you had phrased it as 'once it sheds SOME structure' it would have been more obvious to me what your intentions were. Maybe I'm just not fully up on all wine semantics?
