Wednesday, February 14, 2024 - This intense, wild, but still ultimately elegant Sagrantino was a nice change from my recent lineup. With an hour or two of air this was showing savory nuances of olive, cured meat, smoke, and camphor. Palate is surprisingly balanced with fine sandy tannin, dark spiced fruit, and bitter herbs. This is very much a food wine, and one to enjoy slowly due to the high ABV. Pair with something rich, but not too complicated in flavor. I think this is as ready as it will ever be but as long as you don't mind that savory profile it has plenty more years in the tank.

Only surprise was how little sediment there was, even with two days standing upright and double decanted.
