This intense, wild, but still ultimately elegant Sagrantino was a nice change from my recent lineup. With an hour or two of air this was showing savory nuances of olive, cured meat, smoke, and camphor. Palate is surprisingly balanced with fine sandy tannin, dark spiced fruit, and bitter herbs. This is very much a food wine, and one to enjoy slowly due to the high ABV. Pair with something rich, but not too complicated in flavor. I think this is as ready as it will ever be but as long as you don't mind that savory profile it has plenty more years in the tank.
Only surprise was how little sediment there was, even with two days standing upright and double decanted.

First half of bottle consumed over ~2 months via Coravin. Pulled the cork and allowed to breathe for 4 hours for remainder of the bottle. Tannins are still quite firm, but not overtly brash. Fruit is still prominent, with only a hint of tertiary development. No cocktail sipper, this demands food. Lovely.

Very dark, quite viscous, big rich chewy high alcohol Sagrantino. Notes of charred meat, licorice, black berries, prune, ash, and a dose of amaro. Too much for the red sauced spaghetti alla chittara, but the pork ragu almost stood up to this monster. I liked this a lot more when tasted (and purchased) at the estate. I used to be a big fan of Sangrantino, but now I find it just overdone and a bit overwhelming. Consumed at Union in Pasadena.
