Thursday, May 17, 2012 - Nice showing. Lots of Chablis wool and minerality. While the palate is clean, as the wine airs, it becomes even clearer. Sarah says that this is showing some signs of advanced development, although we both agree that there is no premox here. I find it to be right in the zone, not especially advanced. Has very nice definition, and the sides have been smoothed out and the acidity tempered by time in the cellar. However, there is still a lot of acidity in reserve, and a terrific savory/salty finish.
